Step‑by‑Step Instructions
- Preheat your oven to 300°F (150°C). In a large mixing bowl, combine old-fashioned oats and your choice of nuts. In a separate bowl, mix canola oil, honey, salt, ground cinnamon, and vanilla extract until well combined. Pour this mixture over the oats and nuts and spread it on a baking sheet. Bake for 12 minutes, stir, and bake for another 12-15 minutes until golden. Allow to cool.
- In a medium bowl, blend softened unsalted butter, sugar, and ground cinnamon together until smooth and creamy. Set aside.
- Preheat your grill to medium heat at around 350°F (175°C). Halve the peaches and remove the pits gently. Brush the cut sides with canola oil.
- Place the peach halves cut-side down on the grill. Grill for 7-10 minutes until tender and caramelized. Remove from the grill.
- Spoon a generous amount of cinnamon butter into the center of each grilled peach half. Top with a scoop of vanilla bean ice cream and sprinkle with granola.
- Serve immediately and enjoy the contrast of warm peaches and cold ice cream.

Notes
Choose ripe, firm peaches for grilling. Apply cinnamon butter generously, but avoid oversaturation. Serve immediately for the best contrast of flavors.
