Step‑by‑Step Instructions
  1. Preheat your oven to 300°F (150°C). In a large mixing bowl, combine old-fashioned oats and your choice of nuts. In a separate bowl, mix canola oil, honey, salt, ground cinnamon, and vanilla extract until well combined. Pour this mixture over the oats and nuts and spread it on a baking sheet. Bake for 12 minutes, stir, and bake for another 12-15 minutes until golden. Allow to cool.
  2. In a medium bowl, blend softened unsalted butter, sugar, and ground cinnamon together until smooth and creamy. Set aside.
  3. Preheat your grill to medium heat at around 350°F (175°C). Halve the peaches and remove the pits gently. Brush the cut sides with canola oil.
  4. Place the peach halves cut-side down on the grill. Grill for 7-10 minutes until tender and caramelized. Remove from the grill.
  5. Spoon a generous amount of cinnamon butter into the center of each grilled peach half. Top with a scoop of vanilla bean ice cream and sprinkle with granola.
  6. Serve immediately and enjoy the contrast of warm peaches and cold ice cream.
