Ingredients
  

For the Cake
  • 1 box Strawberry Cake Mix Use a gluten-free mix for gluten-free option.
  • 1 cup Guava Juice/Nectar Fresh guava can provide an extra flavor punch.
  • 3 large Eggs Can substitute with 1/4 cup applesauce.
  • 1/2 cup Coconut Oil Vegetable oil can be used.
For the Cream Cheese Layer
  • 8 oz Cream Cheese Use dairy-free for vegan option.
  • 1/2 cup Granulated Sugar Coconut sugar works as a substitute.
  • 1 tsp Vanilla Extract Opt for pure vanilla for best flavor.
  • 8 oz Cool Whip Use whipped coconut cream for dairy-free.
For the Guava Gel
  • 2 tbsp Cornstarch
  • 1/2 cup Water
  • 1 cup Sweetened Coconut Flakes Optional garnish.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a 13 x 9-inch baking dish with vegetable spray.
  2. In a large mixing bowl, combine the Strawberry Cake Mix, Guava Juice, eggs, and melted Coconut Oil. Mix on low for 30 seconds, then medium-high for 2 minutes.
  3. Pour the batter into the prepared baking pan and bake for 24-26 minutes until golden and a toothpick comes out clean.
  4. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  5. In another bowl, beat the Cream Cheese until fluffy, then add Sugar and Vanilla. Gradually fold in Cool Whip and chill.
  6. In a saucepan, boil Guava Juice and remaining Sugar for about 2 minutes. Mix cornstarch and water for slurry, whisk into boiling mixture until thickened. Cool in the fridge.
  7. Spread the chilled cream cheese layer over the cooled cake, then pour the guava gel on top and smooth it out.
  8. Refrigerate the assembled cake for at least 1 hour before serving.
