  • 1 medium Zucchini Replace with asparagus or seasonal veggies.
  • 1 cup Cherry Tomatoes Grape tomatoes can be used as a substitute.
  • 3-4 cloves Garlic Use garlic powder if short on time.
  • 2 tablespoons Olive Oil Avocado oil can also be used.
  • 1 teaspoon Dried Oregano Adjust according to taste.
  • 1 teaspoon Dried Basil Adjust according to taste.

  • 1/4 cup Fresh Parsley Chopped for garnish.

Step-by-Step Instructions
  1. Prepare the Chicken: Pat chicken breast dry and slice into thin strips, season with salt and pepper.
  2. Cook the Chicken: Heat 2 tablespoons of olive oil over medium heat. Add chicken strips and cook undisturbed for 2 minutes, then stir and cook for 5-7 minutes until golden brown.
  3. Stir-Fry Vegetables: Push chicken to one side of the pan, add minced garlic, sauté for 30 seconds, then add bell peppers and zucchini, stir-fry for 5-7 minutes.
  4. Season: Sprinkle oregano and basil, stir to combine, and adjust salt and pepper according to taste.
  5. Garnish and Serve: Remove from heat, garnish with parsley, and serve immediately, optionally over quinoa or with pita bread.
