  3. In another bowl, mix applesauce, sugar, egg, vegetable oil, and vanilla until smooth.
  4. Combine wet and dry ingredients, folding gently until just mixed. Avoid overmixing.
  5. Fill muffin tin two-thirds full and bake for 18–20 minutes until a toothpick comes out clean.
  6. Allow to cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.
