- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
- In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, and chia seeds. Whisk together.
- In another bowl, mix applesauce, sugar, egg, vegetable oil, and vanilla until smooth.
- Combine wet and dry ingredients, folding gently until just mixed. Avoid overmixing.
- Fill muffin tin two-thirds full and bake for 18–20 minutes until a toothpick comes out clean.
- Allow to cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.
