Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
  2. Cream together the unsalted butter, light brown sugar, granulated sugar, and honey until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until fully combined.
  4. Whisk together the cornmeal, flour, baking powder, cornstarch, and kosher salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture until a thick dough forms.
  6. Scoop about ¼ cup of cookie dough, roll in cornmeal, flatten slightly, and place on baking sheets.
  7. Bake for 11-14 minutes until the edges are set and centers are slightly underbaked.
  8. Cool cookies on the baking sheets before frosting.
  9. Prepare honey buttercream by mixing softened butter, honey, vanilla, and powdered sugar until smooth.
  10. Frost cooled cookies and drizzle with honey and sprinkle with flaky sea salt.
