- Preheat your oven to 350°F (175°C) and coat a 9x13 baking dish with nonstick cooking spray.
- Cook the jumbo pasta shells in salted boiling water until al dente, about 9-11 minutes, then drain and cool.
- In a bowl, mix ricotta, 2 cups mozzarella, parmesan, eggs, parsley, minced garlic, salt, and pepper until smooth.
- Spread 1 cup of spaghetti sauce in the baking dish, then fill each pasta shell with about 1 tablespoon of the cheese filling.
- Pour the remaining spaghetti sauce over the filled shells.
- Cover with foil and bake for 40 minutes.
- Remove foil, sprinkle with remaining mozzarella and parmesan, and bake uncovered for an additional 10-12 minutes.
- Let the shells rest for about 10 minutes before serving.
