Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a 9x13 baking dish with nonstick cooking spray.
  2. Cook the jumbo pasta shells in salted boiling water until al dente, about 9-11 minutes, then drain and cool.
  3. In a bowl, mix ricotta, 2 cups mozzarella, parmesan, eggs, parsley, minced garlic, salt, and pepper until smooth.
  4. Spread 1 cup of spaghetti sauce in the baking dish, then fill each pasta shell with about 1 tablespoon of the cheese filling.
  5. Pour the remaining spaghetti sauce over the filled shells.
  6. Cover with foil and bake for 40 minutes.
  7. Remove foil, sprinkle with remaining mozzarella and parmesan, and bake uncovered for an additional 10-12 minutes.
  8. Let the shells rest for about 10 minutes before serving.
