Caramelizing Onions and Preparing the Beef
- In a large skillet, melt 2 tablespoons of butter over medium-low heat. Add thinly sliced yellow onions and sprinkle in 1 tablespoon of brown sugar. Stir occasionally for 25-30 minutes until deep golden brown.
- In a mixing bowl, combine 1 pound of ground beef with 1 tablespoon of Worcestershire sauce, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of smoked paprika, 1 teaspoon of salt, and ½ teaspoon of black pepper. Mix gently until just combined.
Making the Aioli and Preparing Veggies
- Once onions are caramelized and cooled, transfer to a mixing bowl. Add ½ cup of mayonnaise, 2 tablespoons of sour cream, 1 minced garlic clove, and 1 tablespoon of lemon juice. Season with salt and pepper, then stir well until creamy.
- Rinse and chop 6 cups of mixed greens/romaine lettuce. Dice 2 large tomatoes and slice 1 cucumber into rounds. Thinly slice ½ large red onion.
Cooking the Beef and Assembling Bowls
- Heat 2 tablespoons of olive oil in the skillet over medium-high heat. Add seasoned ground beef, breaking it up with a spatula. Cook for 8-10 minutes until browned and crispy.
- Begin assembling by placing lettuce at the base of each bowl. Layer cooked beef, diced tomatoes, cucumber slices, thinly sliced red onion, and dill pickle slices. Drizzle with caramelized onion aioli, sprinkle with shredded cheese, and garnish with fresh chives.
