- Preheat your oven to 350°F (175°C).
- Grease a 10-inch cast-iron skillet with unsalted butter.
- Peel and thinly slice Yukon Gold potatoes into 1/8 to 1/4-inch rounds.
- In a mixing bowl, combine heavy cream, shredded cheese, minced garlic, fresh thyme, salt, black pepper, and optional nutmeg; stir until blended.
- Spread half of the creamy mixture at the bottom of the greased skillet and layer sliced potatoes on top; repeat the process.
- Pour the remaining creamy mixture over the layered potatoes.
- Bake for 1 hour and 40 to 50 minutes, until golden brown and fork-tender.
