Preparation
- Preheat your oven to 325°F (160°C) and prepare a springform pan.
- Combine crushed chocolate cookies with melted butter in a bowl.
- Press the mixture into the bottom of the prepared pan.
- Beat cream cheese and sugar until creamy, then fold in melted chocolate and vanilla.
- Add eggs one at a time, then gently fold in raspberries.
- Transfer the filling over the crust and smooth the top.
- Bake for approximately 60 minutes until edges are set.
- Cool in the oven with the door slightly open for 1 hour, then refrigerate for at least 4 hours.
- Remove from the pan, slice, and serve with additional raspberries or melted chocolate.
