Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook for 8-10 minutes, or until al dente. Reserve 1 cup of pasta water, then drain the remaining water.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and diced bell pepper; continue cooking for another 2-3 minutes.
  3. Increase the heat to medium-high, then add large shrimp. Sprinkle jerk seasoning over shrimp, cooking for 3-4 minutes until shrimp are pink and opaque.
  4. Pour in coconut milk and lime juice into the skillet. Bring to a gentle simmer over medium heat, cooking for 3-5 minutes. Stir and consider adding reserved pasta water if sauce is too thick.
  5. Add drained pasta to the skillet with sauce and shrimp. Toss everything together until well-coated. Taste and season with salt and pepper as needed.
  6. Remove from heat and garnish with cilantro. Serve immediately with lime wedges.
