Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375ºF (190ºC).
  2. In a large baking dish, combine cubed zucchini, chopped green bell pepper, diced onion, and halved grape tomatoes.
  3. Sprinkle in the Italian herb blend, garlic powder, half of the mozzarella cheese, salt, and pepper.
  4. Drizzle olive oil over the seasoned vegetable mixture and stir thoroughly.
  5. Place the baking dish in the preheated oven and bake uncovered for about 20 minutes.
  6. Remove the dish from the oven and sprinkle the remaining mozzarella cheese generously on top.
  7. Return the dish to the oven for an additional 10 minutes until the cheese is golden brown.
