- Combine 1 cup of oats and 1/2 cup of unsweetened cocoa powder in a mixing bowl. Stir until evenly mixed, about 1 minute.
- Add in 1/2 cup of peanut butter and 1/4 cup of honey (or maple syrup). Stir vigorously for 2-3 minutes until well combined and cohesive.
- Scoop out small portions of the mixture (about 1 tablespoon each), roll them into balls and flatten slightly. Place on a parchment-lined tray.
- Cover the tray with plastic wrap or foil and refrigerate for at least 30 minutes.
- After refrigeration, remove cookies from fridge. Serve with a glass of milk or plant-based alternative.
