- Preheat your oven to 350°F (175°C).
- Melt 3 tablespoons of unsalted Irish butter and coat the inside of a 9x5 inch loaf pan to prevent sticking.
- In a large mixing bowl, combine 4 cups of unbleached all-purpose flour, 2 tablespoons of sugar, 2 tablespoons of baking powder, 1 teaspoon of fine salt, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Whisk together until fully blended.
- Fold in 1 ½ cups of shredded Irish cheddar cheese until well distributed.
- Create a well in the dry mixture and pour in 12 ounces of your chosen Irish beer. Stir gently until just combined.
- Transfer the batter into the prepared loaf pan, smoothing the top evenly with a spatula.
- Drizzle the remaining melted butter (about 2 tablespoons) over the top of the batter.
- Place in the preheated oven and bake for 45–50 minutes, or until a toothpick comes out clean.
- Melt 2 tablespoons of unsalted butter and stir in 1 tablespoon of fresh parsley, 1 teaspoon of garlic powder, and a pinch of salt for the topping.
- Brush the garlic butter topping generously over the warm loaf once baked.
- Cool the bread in the pan for about 10–15 minutes before transferring to a wire rack.
- Serve warm or at room temperature and enjoy!
