Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Melt 3 tablespoons of unsalted Irish butter and coat the inside of a 9x5 inch loaf pan to prevent sticking.
  3. In a large mixing bowl, combine 4 cups of unbleached all-purpose flour, 2 tablespoons of sugar, 2 tablespoons of baking powder, 1 teaspoon of fine salt, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Whisk together until fully blended.
  4. Fold in 1 ½ cups of shredded Irish cheddar cheese until well distributed.
  5. Create a well in the dry mixture and pour in 12 ounces of your chosen Irish beer. Stir gently until just combined.
  6. Transfer the batter into the prepared loaf pan, smoothing the top evenly with a spatula.
  7. Drizzle the remaining melted butter (about 2 tablespoons) over the top of the batter.
  8. Place in the preheated oven and bake for 45–50 minutes, or until a toothpick comes out clean.
  9. Melt 2 tablespoons of unsalted butter and stir in 1 tablespoon of fresh parsley, 1 teaspoon of garlic powder, and a pinch of salt for the topping.
  10. Brush the garlic butter topping generously over the warm loaf once baked.
  11. Cool the bread in the pan for about 10–15 minutes before transferring to a wire rack.
  12. Serve warm or at room temperature and enjoy!
