  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 3/4 cup warm water about 110°F
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 cup fresh arugula
  • 1 tablespoon extra virgin olive oil for drizzling
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
  2. In a large bowl, combine the flour, baking powder, and salt. Mix well.
  3. Add the olive oil and warm water to the dry ingredients. Stir until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Roll out the dough into a 12-inch circle and transfer it to a pizza peel or a baking sheet lined with parchment paper.
  5. In a separate bowl, mix the ricotta cheese, Parmesan cheese, lemon zest, lemon juice, garlic powder, black pepper, and red pepper flakes until well combined.
  6. Spread the ricotta mixture evenly over the pizza dough.
  7. Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
  8. Remove the pizza from the oven and top with fresh arugula and a drizzle of extra virgin olive oil.
  9. Slice and serve with lemon wedges on the side for an extra burst of flavor.
