Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ¼-inch rounds and coat with olive oil and salt.
  3. Spread the sweet potato rounds on the baking sheet and roast for 20-25 minutes, flipping halfway through.
  4. While roasting, heat a skillet, cook the ground beef until browned, and stir in taco seasoning.
