- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes into ¼-inch rounds and coat with olive oil and salt.
- Spread the sweet potato rounds on the baking sheet and roast for 20-25 minutes, flipping halfway through.
- While roasting, heat a skillet, cook the ground beef until browned, and stir in taco seasoning.
- Layer the roasted sweet potatoes with the seasoned beef and sprinkle with shredded cheese.
- Return to the oven for 5-7 minutes or until the cheese is melted.
- Top with fresh vegetables and serve with sour cream and taco sauce.
