Method
 

Step‑By‑Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare mini loaf pans by greasing them.
  2. In a food processor, finely grind the shelled pistachios and almonds, then set aside.
  3. Whisk together the ground nut mixture, rice flour, baking powder, and salt in a mixing bowl.
  4. In another bowl, whisk together the eggs, lime zest, lime juice, honey, and macadamia oil until smooth.
  5. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Divide the batter evenly into the pans.
  6. Bake for 20-25 minutes until a toothpick comes out clean. Allow to cool in the pans for a few minutes.
  7. Blend ripe avocados, maple syrup, melted coconut oil, and vanilla extract until smooth for the frosting.
  8. Spread the avocado frosting over the cooled mini loaves and serve.
