Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup raspberry puree fresh or frozen raspberries blended and strained
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • 1 teaspoon pink food coloring optional

Method
 

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup of sugar and continue to beat until well combined. Mix in the vanilla extract.
  5. Add the eggs one at a time, mixing well after each addition. Then, add the sour cream, raspberry puree, lemon juice, flour, and pink food coloring (if using). Mix until just combined and smooth.
  6. Pour the cheesecake batter over the cooled crust in the springform pan. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  7. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to set completely.
  9. Before serving, you can top the cheesecake with additional raspberry puree or fresh raspberries for garnish.
