  • 1 red bell pepper diced
  • 1 red onion sliced into strips
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives halved
  • 2 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
For the Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 tablespoons lemon juice added at the end
  • 1/2 cup feta cheese crumbled
  • fresh parsley optional garnish

Method
 

Step-by-Step Instructions
  1. Chop the chicken into bite-sized pieces and prepare the vegetables: slice zucchini, dice bell peppers, slice onion, halve cherry tomatoes, mince garlic, chop sun-dried tomatoes, and halve Kalamata olives.
  2. Heat olive oil in a large skillet or wok over medium-high heat for 1-2 minutes.
  3. Add the chicken in a single layer and sear for 5-7 minutes until golden brown and cooked through.
  4. Remove the chicken and add sliced red onion and minced garlic; sauté for 2-3 minutes until softened.
  5. Add zucchini, bell peppers, and sun-dried tomatoes; cook for 4-5 minutes until vegetables are tender-crisp.
  6. Return chicken to the skillet, sprinkle with oregano, basil, and thyme; toss everything together for approximately 2 minutes.
  7. Remove from heat, drizzle with lemon juice, add olives, and crumble feta cheese on top before serving.
