Step‑by‑Step Instructions
  1. Begin by washing and chopping all your vegetables and chicken into bite-sized pieces. This will ensure even cooking throughout the Mediterranean Chicken Stir Fry.
  2. In a large skillet, heat 1.5 tablespoons of extra virgin olive oil over medium-high heat. Once the oil is shimmering, add the chopped chicken and season with salt and pepper. Sear the chicken for 5 to 6 minutes, or until it's golden brown and cooked through, reaching an internal temperature of 165°F.
  3. In the same skillet, add the remaining 1.5 tablespoons of olive oil along with the sliced red onion and minced garlic. Sauté for about 1 to 2 minutes until fragrant and the onion begins to soften.
  4. Next, add the zucchini and bell peppers to the pan, cooking for an additional 4 to 5 minutes until they are tender but still vibrant.
  5. Return the seared chicken back to the skillet with the sautéed vegetables. Toss in the halved cherry tomatoes and Kalamata olives, followed by the dried oregano, basil, and thyme.
  6. Lower the heat and stir in the fresh lemon juice and crumbled feta cheese. Cook for an additional minute just until the feta warms slightly.
