Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (356°F).
  2. In a large mixing bowl, mash three very ripe bananas until mostly smooth.
  3. Mix in a beaten large egg, Greek yogurt, vanilla extract, and honey to the mashed bananas.
  4. Blend the gluten-free rolled oats with sea salt, baking powder, and ground cinnamon until fine.
  5. Combine the blended oat flour mixture with the wet banana mixture in the bowl. Stir until just mixed.
  6. Line a 9x5-inch loaf pan with parchment paper. Pour the batter into the prepared pan.
  7. Sprinkle oat flakes on top of the batter before baking.
  8. Bake for approximately 50 minutes, until golden brown and a toothpick comes out clean.
  9. Remove from oven and let it cool in the pan for about 15 minutes.
  10. Once cooled, slice and serve your banana bread with oats.
