- Preheat your oven to 180°C (356°F).
- In a large mixing bowl, mash three very ripe bananas until mostly smooth.
- Mix in a beaten large egg, Greek yogurt, vanilla extract, and honey to the mashed bananas.
- Blend the gluten-free rolled oats with sea salt, baking powder, and ground cinnamon until fine.
- Combine the blended oat flour mixture with the wet banana mixture in the bowl. Stir until just mixed.
- Line a 9x5-inch loaf pan with parchment paper. Pour the batter into the prepared pan.
- Sprinkle oat flakes on top of the batter before baking.
- Bake for approximately 50 minutes, until golden brown and a toothpick comes out clean.
- Remove from oven and let it cool in the pan for about 15 minutes.
- Once cooled, slice and serve your banana bread with oats.
