  • 2 pounds baby potatoes halved
  • 1/4 cup olive oil
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the olive oil, orange juice, lime juice, minced garlic, cumin, smoked paprika, salt, and black pepper until well combined.
  3. Add the halved baby potatoes to the bowl and toss until they are evenly coated with the marinade.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through for even cooking.
  6. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
