Step-by-Step Instructions for Homemade Doner Kebab Recipe
  1. In a large mixing bowl, combine the ground beef or lamb with grated onion, garlic, yogurt, and tomato paste. Add in salt, pepper, cumin, sweet paprika, oregano, cayenne pepper, and olive oil. Mix until sticky and well blended.
  2. Divide the seasoned meat mixture into five equal portions. Place each portion between two sheets of parchment paper. Roll each portion into a thin rectangle, about half an inch thick.
  3. Peel off the top sheet of parchment paper and tightly roll the meat rectangle into a log shape, using the parchment to assist. Wrap the kebab log securely in parchment.
  4. Preheat your oven to 200°C (400°F). Place the wrapped meat log on a baking sheet, seam side down, and bake for 20-25 minutes.
  5. Allow the kebab to rest for about 5 minutes before unwrapping. Use a sharp knife to slice the meat thinly. Stuff a warm pita with the doner meat and toppings.
