Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 8 minutes.
  3. Add diced onion and minced garlic; sauté until onion is translucent, about 5 minutes.
  4. Sprinkle taco seasoning and mix in black beans, corn, diced tomatoes, and salsa; let simmer on low for 5 minutes.
  5. Grease a 9x13-inch baking dish. Lay half of the corn tortilla quarters in the bottom.
  6. Spread half of the beef mixture over the tortillas and sprinkle with 1 cup of cheese.
  7. Add remaining tortilla quarters, then the remaining beef mixture; dollop sour cream on top.
  8. Top with the remaining cheese, black olives, and green onions.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  10. Let the casserole cool for about 10 minutes before serving.
