- Preheat your oven to 350°F (175°C).
- Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 8 minutes.
- Add diced onion and minced garlic; sauté until onion is translucent, about 5 minutes.
- Sprinkle taco seasoning and mix in black beans, corn, diced tomatoes, and salsa; let simmer on low for 5 minutes.
- Grease a 9x13-inch baking dish. Lay half of the corn tortilla quarters in the bottom.
- Spread half of the beef mixture over the tortillas and sprinkle with 1 cup of cheese.
- Add remaining tortilla quarters, then the remaining beef mixture; dollop sour cream on top.
- Top with the remaining cheese, black olives, and green onions.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
- Let the casserole cool for about 10 minutes before serving.
