  • 12 oz Udon Noodles fresh or frozen
For the Protein
  • 1 lb Boneless Chicken Breast or beef, turkey, or tofu
For the Vegetables
  • 2 medium Bell Peppers sliced thinly
  • 2 medium Carrots julienned or thinly sliced
  • 4 medium Green Onions chopped finely
For the Sauce
  • 1/4 cup Soy Sauce low-sodium recommended
  • 2 tbsp Sesame Oil
  • 1/2 cup Vegetable Broth or water
  • 2 cloves Garlic Cloves minced

Method
 

Preparation Steps
  1. Cook the udon noodles according to package instructions for about 8-10 minutes until tender. Drain and rinse under cold water.
  2. In a large skillet, heat 2 tbsp of sesame oil over medium-high heat. Add the sliced chicken and cook for 5-7 minutes until golden brown.
  3. Stir-fry the sliced bell peppers and julienned carrots for 3-4 minutes until tender but crunchy.
  4. Return the cooked chicken to the skillet with vegetables. Add the udon noodles, soy sauce, and vegetable broth. Toss for 2-3 minutes over medium heat.
  5. In the last minute, stir in minced garlic. Remove from heat and garnish with chopped green onions.
  6. Serve hot, drizzling with additional soy sauce if desired.
