Ingredients
  

  • 1 pound boneless skinless chicken breasts (about 4 breasts)
  • 8 ounces mushrooms finely chopped
  • 1 cup fresh spinach chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat the oven to 375°F.
  2. In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped mushrooms and cook for about 5-7 minutes until they are softened and any moisture has evaporated.
  3. Add the minced garlic and chopped spinach to the skillet, cooking for an additional 2-3 minutes until the spinach is wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cooked mushroom mixture, cream cheese, mozzarella cheese, thyme, oregano, salt, and pepper. Mix until well combined.
  5. Using a sharp knife, create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.
  6. Stuff each chicken breast with the mushroom mixture, using toothpicks to secure the openings if necessary.
  7. In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  9. Remove from the oven and let rest for 5 minutes before serving.
