  • 1 cup Mushrooms any type of mushrooms can be used
  • 4 slices Bacon omit for a lighter version or use turkey bacon
  • 1 cup Swiss Cheese can be replaced with mozzarella or cheddar
  • 2 large Eggs a flax egg can be used for a vegan version
  • 2 tablespoons Worcestershire Sauce coconut aminos for gluten-free option
  • 1/4 cup Ketchup sugar-free ketchup can be used
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Step‑By‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove from skillet and crumble.
  3. In the same skillet, sauté finely chopped onions and mushrooms in bacon drippings for 5-6 minutes until translucent.
  4. In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, Parmesan cheese, crumbled bacon, Swiss cheese, and sautéed vegetables. Mix until just combined.
  5. Add eggs, Worcestershire sauce, ketchup, garlic powder, thyme, salt, and pepper to the mixture and stir until evenly incorporated.
  6. Transfer the mixture to a greased baking dish, forming it into a loaf shape with a slight indentation on top.
  7. Spread remaining ketchup on top of the shaped meatloaf.
  8. Bake in the preheated oven for 60-70 minutes until the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for about 10 minutes before slicing and serving.
