Ingredients
  

  • 2 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley optional, for garnish

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
  3. Pierce each potato several times with a fork to allow steam to escape during baking.
  4. In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
  5. Rub the olive oil mixture all over the potatoes, ensuring they are well coated.
  6. Place the potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 45-60 minutes, or until the potatoes are tender and the skins are crispy.
  7. Remove the potatoes from the oven and sprinkle the grated Parmesan cheese evenly over the top of each potato. Return them to the oven for an additional 5-10 minutes, or until the cheese is melted and golden.
  8. Remove from the oven, let cool for a few minutes, and garnish with chopped fresh parsley if desired.
