  • 2 stalks Fresh lemongrass Minced.
  • 3 cloves Fresh garlic Crushed.
  • 1 medium Medium shallot Can substitute with red onion.
  • 2 tablespoons Fish sauce Adjust for milder taste.
  • 2 tablespoons Dark soy sauce Kicap manis is a sweeter substitute.
  • 1 tablespoon Brown sugar Palm sugar works as a wonderful alternative.
  • 2 tablespoons Fresh lime juice Zest can be saved for other uses.
  • 1 each Chili peppers Mix red and green for vibrancy.
  • 1-2 tablespoons Neutral vegetable oil Used for frying.
For the Wrap
  • 8-10 leaves Lettuce leaves Washed and dried thoroughly.
  • 50 grams Grated peanuts Substitute with seeds if allergic.
  • 30 grams Fresh coriander/spring onions Optional garnish.

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the chicken mince with half of the minced lemongrass, crushed garlic, fish sauce, and dark soy sauce. Mix well and let it sit for 30 minutes.
  2. Wash the lettuce leaves under cold water and dry them thoroughly.
  3. Heat 1-2 tablespoons of vegetable oil in a frying pan over medium-high heat until it shimmers.
  4. Add the remaining minced lemongrass and crushed garlic to the pan and sauté for 1-2 minutes until fragrant.
  5. Add the marinated chicken mixture into the pan and stir-fry for 5-7 minutes until cooked through.
  6. Optional: Add a cornstarch slurry to thicken the filling, stirring until the desired consistency is reached.
  7. Scoop the savory chicken filling into each lettuce leaf and top with grated peanuts and fresh coriander.
