Step-by-Step Instructions
  1. Bring 1 cup of filtered water to a gentle simmer in a small saucepan over medium heat. Add a handful of fresh sage leaves and steep for about 5 minutes.
  2. Introduce fresh or frozen blackberries to the sage water, raise the heat to simmer again, and lightly mash the blackberries.
  3. Strain the mixture into a heatproof container, stir in 1 cup of cold water, and add maple syrup or honey. Squeeze in the juice of half a lemon.
  4. Cover the container and chill in the refrigerator for about 30 minutes until cool.
