Preparation Steps
- In a medium saucepan, combine 1 cup of water, 1 cup of granulated sugar, and 2 tablespoons of dried culinary lavender. Bring to a simmer over medium heat, stirring occasionally until sugar fully dissolves.
- Once dissolved, remove from heat and let it steep for about 10 minutes.
- Carefully strain the syrup through a fine mesh sieve to remove lavender buds.
- Let the syrup cool down to room temperature.
- While the syrup cools, slice 3-4 fresh lemons in half and extract the juice until you have about ¾ cup of fresh lemon juice.
- Strain the juice through a fine sieve to remove seeds and pulp.
- In a tall glass filled with ice, pour in the freshly squeezed lemon juice and add about ¼ cup of the lavender syrup.
- Stir gently to combine. Adjust sweetness by adding more syrup if desired.
- For the spirited option, add 1 to 2 ounces of vodka and stir gently again.
- Top with sparkling water until full and give it a last gentle stir.
- Garnish with a fresh slice of lemon and a sprig of lavender.
