Method
 

Preparation Steps
  1. In a medium saucepan, combine 1 cup of water, 1 cup of granulated sugar, and 2 tablespoons of dried culinary lavender. Bring to a simmer over medium heat, stirring occasionally until sugar fully dissolves.
  2. Once dissolved, remove from heat and let it steep for about 10 minutes.
  3. Carefully strain the syrup through a fine mesh sieve to remove lavender buds.
  4. Let the syrup cool down to room temperature.
  5. While the syrup cools, slice 3-4 fresh lemons in half and extract the juice until you have about ¾ cup of fresh lemon juice.
  6. Strain the juice through a fine sieve to remove seeds and pulp.
  7. In a tall glass filled with ice, pour in the freshly squeezed lemon juice and add about ¼ cup of the lavender syrup.
  8. Stir gently to combine. Adjust sweetness by adding more syrup if desired.
  9. For the spirited option, add 1 to 2 ounces of vodka and stir gently again.
  10. Top with sparkling water until full and give it a last gentle stir.
  11. Garnish with a fresh slice of lemon and a sprig of lavender.
