Ingredients
  

For the Sago Base
  • 1 cup sago pearls cook until soft
  • 3 cups water at a rolling boil
For the Strawberry Puree
  • 2 cups fresh strawberries ripe and juicy
  • 1 tablespoon sweetener optional, adjust to taste
For the Matcha Flavor
  • 2 tablespoons matcha powder high-quality
For the Topping
  • 1 cup plant-based whipped cream or coconut cream ensure it's vegan
  • fresh mint or crushed berries optional garnishes

Method
 

Prepare Sago Pearls
  1. Bring 3 cups of water to a rolling boil in a medium saucepan. Add in 1 cup of sago pearls and cook for about 20 minutes, stirring occasionally.
  2. Drain and rinse the cooked sago under cold water to stop the cooking process. Set aside to cool while preparing the strawberry puree.
Make Strawberry Puree
  1. In a blender, combine 2 cups of fresh strawberries with a tablespoon of sweetener and blend until smooth.
  2. Transfer the strawberry puree into a bowl and set aside.
Assemble the Dessert
  1. In individual serving cups, start with a layer of sago pearls, followed by a layer of strawberry puree. Repeat until cups are filled, leaving space for the topping.
Prepare Toppings
  1. Add a dollop of plant-based whipped cream or coconut cream on top of each serving. Garnish with fresh mint or crushed berries if desired.
Chill and Serve
  1. Cover assembled cups with plastic wrap and refrigerate for at least 30 minutes before serving.
  2. Remove from fridge and enjoy the vibrant layers of your dessert.
