Preparation Steps
  1. Ensure cream cheese is at room temperature and gather all ingredients.
  2. In a medium saucepan, whisk together egg yolks and sugar until pale and thickened.
  3. Gradually add whole milk and heavy cream, then whisk in cream cheese until smooth.
  4. Stir in vanilla extract, strawberry jam, lemon juice, and salt until combined.
  5. Heat mixture over medium-low heat until 165°F to 176°F, stirring constantly.
  6. Strain the mixture through a fine-mesh sieve into a heatproof container.
  7. Submerge the container in an ice water bath to cool for 30-45 minutes.
  8. Pour cooled mixture into an ice cream maker and churn according to instructions.
  9. Transfer gelato to a freezer-safe container and freeze for at least 24 hours.
  10. Before serving, let gelato soften for 2-3 minutes and add crushed graham crackers.
