Ingredients
  

  • 2 pounds bone-in skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper optional for heat
  • Juice of 2 limes
  • 1/4 cup fresh cilantro chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, cumin, oregano, cayenne pepper, and lime juice. Mix well to create a marinade.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 30 minutes at room temperature, or refrigerate for up to 4 hours for more flavor.
  4. Place the marinated chicken thighs on a baking sheet lined with parchment paper, skin side up.
  5. Roast in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  6. Remove from the oven and let the chicken rest for 5 minutes. Garnish with chopped cilantro before serving.
