Ingredients

  • 1 pound fresh sushi-grade salmon skin removed
  • 1 medium orange juiced and zested
  • 1 medium lemon juiced and zested
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 avocado sliced
  • Microgreens or edible flowers for garnish optional

Method

  1. Begin by slicing the salmon into thin, even pieces, about 1/4 inch thick. Arrange the slices on a serving platter.
  2. In a small bowl, whisk together the orange juice, lemon juice, olive oil, dill, parsley, sea salt, and black pepper until well combined.
  3. Drizzle the citrus dressing over the salmon slices, ensuring they are evenly coated.
  4. Allow the salmon to marinate in the refrigerator for about 15-20 minutes to absorb the flavors.
  5. Just before serving, arrange the avocado slices around the salmon and garnish with microgreens or edible flowers if desired.
