Shape the mixture into patties, about 2-3 inches in diameter. You should have about 6-8 patties.
Heat olive oil in a large skillet over medium heat. Once hot, add the salmon patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
In a separate bowl, whisk together the sour cream, mayonnaise, lemon juice, minced garlic, and dill. Season with salt and pepper to taste.
