  • 3 cups Potatoes Yukon Gold for creaminess, russets for fluffiness
  • 2 cups Mixed Vegetables use fresh or frozen
  • 1 medium Onion or use onion powder if fresh is unavailable
  • 2 cloves Garlic minced, can substitute with garlic powder
  • 1 cup Milk/Cream for dairy-free option, use almond or coconut milk
For the Topping
  • 1 cup Breadcrumbs gluten-free options are available
  • 1 cup Cheese cheddar is classic, but vegan cheese can be used

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, add the ground beef, diced onions, and minced garlic. Cook over medium heat for 5-7 minutes until browned.
  3. Stir in mixed vegetables and diced potatoes, adding a splash of milk or cream. Cook for another 3-5 minutes.
  4. Transfer the mixture to a greased baking dish, spreading it out evenly.
  5. Sprinkle the breadcrumbs over the mixture, then add your cheese of choice.
  6. Bake the casserole in the preheated oven for 25-30 minutes until the top is golden brown.
  7. Remove from the oven and let cool for about 5 minutes before serving.
