Method
 

Step-by-Step Instructions
  1. Heat the oil in a large saucepan over medium heat. Once shimmering, add the ground beef, breaking it apart with a spatula. Sauté for about 5-7 minutes until browned.
  2. Stir in grated ginger and soy sauce, cooking for an additional 10-15 seconds until fragrant.
  3. Pour in water and sprinkle in white pepper. Cover and simmer for 10 minutes, adding more water if necessary.
  4. In a pot, boil salted water and cook vermicelli noodles for 3-5 minutes. Drain and rinse under cold water.
  5. Mix corn flour with water until smooth, then stir into the beef sauce, cooking for 2-3 minutes to thicken.
  6. Add the cooked noodles to the beef mixture, tossing to combine and heat through for another minute.
  7. Transfer to serving plates and garnish with chopped spring onions. Optionally drizzle with dark vinegar and chili oil.
