- Heat the oil in a large saucepan over medium heat. Once shimmering, add the ground beef, breaking it apart with a spatula. Sauté for about 5-7 minutes until browned.
- Stir in grated ginger and soy sauce, cooking for an additional 10-15 seconds until fragrant.
- Pour in water and sprinkle in white pepper. Cover and simmer for 10 minutes, adding more water if necessary.
- In a pot, boil salted water and cook vermicelli noodles for 3-5 minutes. Drain and rinse under cold water.
- Mix corn flour with water until smooth, then stir into the beef sauce, cooking for 2-3 minutes to thicken.
- Add the cooked noodles to the beef mixture, tossing to combine and heat through for another minute.
- Transfer to serving plates and garnish with chopped spring onions. Optionally drizzle with dark vinegar and chili oil.
