  • 2 tablespoons butter for sautéing
  • 8 ounces mushrooms sliced, cremini or preferred variety
  • 2 medium shallots minced
  • 1 cup chicken broth or vegetable broth
  • 1 cup sour cream Greek yogurt can be used
  • 1 tablespoon cornstarch to thicken the sauce
  • 1 cup roasted red bell peppers optional
  • 2 tablespoons capers optional

Method
 

Step-by-Step Instructions
  1. Marinate shrimp with olive oil and Cajun seasoning; let sit for 15 minutes.
  2. Cook fettuccini in salted boiling water for 8-10 minutes until al dente, then drain.
  3. Sauté mushrooms and shallots in butter for 4-5 minutes until golden, then set aside.
  4. Cook marinated shrimp in the same skillet for 2-3 minutes until pink and charred; remove and keep warm.
  5. Add chicken broth to the skillet and simmer for 5 minutes; combine sour cream and cornstarch, then stir into broth until thick.
  6. Combine cooked shrimp and vegetables with the sauce; heat through.
  7. Serve on fettuccini, garnished with additional Cajun seasoning or herbs.
