  2. Heat a 12-inch cast-iron skillet over medium heat, adding olive oil once hot. Sear the chicken thighs for 5 minutes without disturbing.
  3. Carefully flip the chicken thighs, reduce heat to low-medium, and cook for an additional 5 minutes until fully cooked.
  4. In the same skillet, add sliced apricots and sauté for 3-5 minutes until softened but still holding shape.
  5. Pour honey and lime juice over the apricots, stir gently, then return seared chicken to the skillet and heat for 1 minute.
  6. Garnish with fresh thyme and lime slices, serve immediately.
