  1. Whisk together honey, hot sauce, and barbecue sauce in a medium bowl until smooth.
  2. Heat vegetable oil in a skillet over medium heat. Add chicken and onion, stirring for 2-3 minutes until warmed.
  3. Stir in sauce mixture and cook for another 1-2 minutes, then set aside.
  4. Brush one side of each tortilla with vegetable oil.
  5. Place one tortilla in the skillet, add cheese, chicken mixture, more cheese, and top with another tortilla, oil side up.
