  • 1/2 cup soy sauce low-sodium preferred
  • 1/4 cup honey or agave nectar for low-carb
  • 1/4 cup peanut butter creamy natural varieties
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon fresh ginger grated
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • to taste red pepper flakes optional
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice fresh juice preferred
For the Chicken
  • 8 pieces chicken thighs bone-in, skin-on
For Garnishing
  • to taste fresh cilantro
  • to taste toasted sesame seeds

Method
 

Marinade Preparation
  1. In a medium mixing bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, ginger, garlic, cumin, coriander, red pepper flakes, sesame oil, and lime juice until smooth.
Marinating the Chicken
  1. Place chicken thighs in a bowl or zip-top bag. Pour marinade over chicken, ensuring each piece is coated. Seal and refrigerate for at least 2 hours or overnight.
Cooking
  1. Preheat grill to medium-high heat (375°F) or oven to 400°F (200°C). For grilling, cook chicken for 6-8 minutes on each side, until temperature reaches 165°F.
  2. For roasting, arrange chicken on a baking sheet and roast for 35-40 minutes, basting occasionally.
Serving
  1. Remove from heat and let rest. Garnish with cilantro and sesame seeds before serving.
