Ingredients
  

For the Meatloaf
  • 1 pound Ground Beef Use lean ground beef
  • 1 cup Breadcrumbs Or crushed oats for gluten-free
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Fresh minced
  • 1 large Egg Acts as a binder
  • 1/2 cup Ketchup Use tomato paste for low sugar
  • 2 tablespoons Worcestershire Sauce Soy sauce can be used
  • 1 teaspoon Thyme Fresh or dried
  • 1 teaspoon Oregano Fresh preferred
  • to taste Salt
  • to taste Pepper
For the Mushroom Gravy
  • 8 ounces Mushrooms Fresh, sliced
  • 2 tablespoons Unsalted Butter Can use olive oil
  • 1/4 cup All-Purpose Flour Or gluten-free flour
  • 2 cups Beef Broth Low sodium preferred
  • 1/2 cup Heavy Cream Use half-and-half as a lighter option

Method
 

Mouthwatering Meatloaf with Mushroom Gravy
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, egg, ketchup, Worcestershire sauce, thyme, oregano, salt, and pepper.
  3. Transfer the mixture to the loaf pan and shape it. Optionally, spread ketchup on top.
  4. Bake for 50 to 60 minutes until the internal temperature is 160°F (70°C). Let it rest for 10 minutes.
  5. For the gravy, sauté mushrooms in melted butter until browned. Sprinkle flour and stir for 1 minute.
  6. Gradually whisk in the beef broth and bring to a simmer until thickened.
  7. Stir in heavy cream and simmer for 3-5 minutes. Adjust seasoning with salt and pepper.
  8. Slice the meatloaf and serve with mushroom gravy over the top.
