Step-by-Step Instructions for Oyster Omelet
  1. Rinse the fresh oysters under cold running water and drain them thoroughly. Mix with sweet potato starch, salt, and chopped coriander until well coated.
  2. Heat oil in a non-stick skillet over medium-high heat. Pour the oyster mixture into the skillet and cook for about 5 minutes until the edges firm up.
  3. Pour the beaten eggs evenly over the top of the oyster mixture and cook undisturbed for 30 seconds. Flip the omelet and cook for an additional 2-3 minutes.
  4. Transfer to a plate, garnish with extra chopped coriander, and serve immediately, optionally with a side of chili sauce.
