Step‑by‑Step Instructions
  1. Heat 2 tablespoons of oil in a large skillet over medium heat until shimmering. Add minced garlic and ginger, sautéing for about 1 minute until fragrant and golden.
  2. Introduce the chopped onions to the skillet and cook for 3-4 minutes, stirring occasionally, until onions become translucent and tender.
  3. Stir in the chopped tomatoes and continue cooking for about 5 minutes until the tomatoes soften and blend into a saucy consistency.
  4. Add the fresh spinach and cashews to the skillet, stirring continuously for about 3-4 minutes until the spinach wilts down.
  5. Gently fold in the cubed paneer along with 1 tablespoon of lime juice and salt to taste. Cook for an additional 2-3 minutes.
