Ingredients

For the Meatloaf
  • 1 tbsp Olive Oil Adds moisture and enhances flavor; use vegetable oil as a substitute if needed.
  • 80 g Onion, finely diced Provides aroma and sweetness; shallots can be used for a milder taste.
  • 2 cloves Garlic, minced Boosts flavor profile; adjust quantity based on preference.
  • 900 g Ground Chicken Main protein source that creates a moist meatloaf; turkey or lean beef can be alternative options.
  • 60 g Seasoned Breadcrumbs Adds texture and body to the mix; consider panko for extra crunch.
  • 2 tsp Milk Contributes moisture; chicken broth can be used as a dairy-free substitution.
  • 30 g Parmesan Cheese, grated Provides a salty and nutty flavor; try Pecorino Romano as a substitute.
  • 1 large Egg Binds the ingredients and adds richness; ground flaxseed mixed with water can be a vegan alternative.
  • 2 tbsp Fresh Parsley, chopped Adds freshness and color; basil or oregano can introduce different flavors.
  • 1 tsp Italian Seasoning Enhances the overall seasoning profile; mix dried herbs like oregano, basil, and thyme for a fresh twist.
  • ½ tsp Salt Essential for flavor; adjust according to specific dietary needs.
  • 3 strings Mozzarella Cheese, cut into 1cm slices Creates a gooey center; low-fat alternatives may not melt as well.
For the Topping
  • 120 ml Marinara Sauce Provides a tangy topping; both homemade or store-bought options work well.
  • 2 tbsp Panko Breadcrumbs Adds a crunchy topping; regular breadcrumbs can act as an alternative.
  • 20 g Butter, melted Binds breadcrumb topping and aids in browning; olive oil can also be used here.
  • 120 g Shredded Mozzarella Cheese Enhances the melted cheese flavor on top; feel free to add more for extra cheesiness.

Method

Step-by-Step Instructions for Parmesan Chicken Meatloaf
  1. Preheat the oven to 200°C (400°F). Line a baking sheet with aluminum foil and lightly spray it with cooking spray.
  2. In a medium skillet, heat a drizzle of olive oil over medium heat. Add the finely diced onion and minced garlic, sauté for about 5 minutes until translucent.
  3. In a large mixing bowl, combine ground chicken, cooled onion and garlic mixture, seasoned breadcrumbs, milk, grated Parmesan cheese, egg, chopped parsley, Italian seasoning, and salt. Mix gently until just combined.
  4. Shape about two-thirds of the meat mixture into a rectangle on the prepared baking sheet, about 1 inch thick. Add the mozzarella cheese slices along the center and cover with the remaining meat mixture.
  5. Spread marinara sauce over the top of the meatloaf. Bake for 45 minutes or until the internal temperature reaches 74°C (165°F).
  6. Prepare the topping by combining panko breadcrumbs, extra grated Parmesan, melted butter, and chopped parsley in a small bowl.
  7. After 45 minutes, remove the meatloaf from the oven. Sprinkle shredded mozzarella cheese and breadcrumb mixture on top. Return to the oven for an additional 15 to 20 minutes.
  8. Let the meatloaf rest for about 10 minutes before slicing.
