- In a large mixing bowl, add your pimento cheese and softened unsalted butter. Mix until fully incorporated and creamy, about 2–3 minutes.
- Gently fold in the all-purpose flour and salt. Knead the dough lightly until it comes together, about 2–3 minutes.
- Shape the dough into a log approximately 1.5 inches in diameter. Wrap in plastic wrap and refrigerate for 1 hour.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Carefully slice the chilled dough into ¼ inch rounds and place them on the prepared baking sheet.
- Bake for 20–22 minutes, until the edges are light golden brown.
- Remove the crackers from the oven and allow them to cool completely on the baking sheet.
