Step-by-Step Instructions for Slow-Roasted Rosemary Lamb Shoulder
- Preheat your oven to 160°C (320°F).
- Let the lamb shoulder sit at room temperature for about 30 minutes.
- Combine garlic, rosemary, olive oil, salt, pepper, lemon juice, and honey to make the marinade.
- Rub the marinade all over the lamb shoulder and let it absorb flavors.
- Chop onions and place in the bottom of the roasting pan, then pour over the lamb stock.
- Place the lamb in the roasting pan and cover with a lid or foil. Roast for about 4 hours.
- Increase the oven temperature to 180°C (356°F) and roast uncovered for an additional 20-25 minutes.
- Remove the lamb, rest for 15-20 minutes, then slice and serve.
