  • 1/4 cup Olive Oil
  • 4 cloves Garlic finely chopped
  • 1/4 cup Fresh Rosemary finely chopped
  • 1 tbsp Salt
  • 1 tsp Black Pepper
For the Base
  • 2 large Onions chopped
  • 2 cups Lamb Stock
  • 2 tbsp Lemon Juice
  • 1 tbsp Honey optional

Step-by-Step Instructions for Slow-Roasted Rosemary Lamb Shoulder
  1. Preheat your oven to 160°C (320°F).
  2. Let the lamb shoulder sit at room temperature for about 30 minutes.
  3. Combine garlic, rosemary, olive oil, salt, pepper, lemon juice, and honey to make the marinade.
  4. Rub the marinade all over the lamb shoulder and let it absorb flavors.
  5. Chop onions and place in the bottom of the roasting pan, then pour over the lamb stock.
  6. Place the lamb in the roasting pan and cover with a lid or foil. Roast for about 4 hours.
  7. Increase the oven temperature to 180°C (356°F) and roast uncovered for an additional 20-25 minutes.
  8. Remove the lamb, rest for 15-20 minutes, then slice and serve.
