Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare baking sheets by greasing them.
  2. Unfold the thawed puff pastry and cut it into 25 squares about 2 inches each.
  3. Bake the pastry squares for 11 to 13 minutes until golden brown.
  4. Make the shallot sauce by combining grated and chopped shallots with mustard, mayonnaise, and vinegar.
  5. Whisk in olive oil until emulsified and smooth.
  6. Assemble the bites with sauce on pastry squares, topped with greens.
  7. Add layers of smoked salmon on top of the greens.
  8. Drizzle remaining sauce over the bites and garnish with cheese.
