Step-by-Step Instructions
  1. In a large bowl, combine the chicken thighs with coconut milk, olive oil, chopped onion, minced garlic, freshly grated ginger, chili paste, ground cumin, paprika, salt, and black pepper. Mix everything well, ensuring each thigh is evenly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 24 hours for deeper flavor infusion.
  2. While the chicken marinates, preheat your oven to 375°F (190°C). Make sure your baking dish is ready for the chicken.
  3. After marinating, remove the chicken from the refrigerator and transfer it to a baking dish, arranging them in a single layer. Pour the remaining marinade over the chicken. Place the dish in the preheated oven and bake for 35-40 minutes.
  4. Once baked, let the chicken rest for 5 minutes, then squeeze fresh lime juice over the chicken and garnish with chopped fresh cilantro.
