Marinating and Cooking
- In a mixing bowl, combine chicken breasts with light soy sauce, dark soy sauce, Shaoxing wine, sugar, cornstarch, and a splash of Sha Cha sauce. Allow it to sit for about 15 minutes at room temperature.
- Heat 1 tablespoon of cooking oil in a wok over high heat. Add the marinated chicken in a single layer and stir-fry for 4-5 minutes until nearly cooked.
- Add another tablespoon of oil to the wok and toss in minced garlic, ginger, and sliced onion. Stir for about 30 seconds or until fragrant.
- Add the bell peppers and cook for about 2 minutes until they soften while retaining some crunch.
- Return the chicken to the wok and pour in the remaining Sha Cha sauce. Stir-fry for 2-3 minutes until everything is well-coated.
- Finally, toss in chopped scallions and stir for about 30 seconds. Serve hot over jasmine rice or noodles.
