Ingredients
  

For the Chicken
  • 1 lb Chicken Breasts or substitute with beef, tofu, shrimp, or mushrooms
For the Sauce
  • 3 tbsp Sha Cha Sauce use popular brands like Bull Head
  • 1 tbsp Light Soy Sauce opt for low-sodium if desired
  • 1 tbsp Dark Soy Sauce
  • 2 tbsp Shaoxing Wine or dry sherry as a substitute
  • 1 tbsp Sugar adjust amount for sweetness preference
  • 1 tbsp Cornstarch for marinating chicken
For the Vegetables
  • 2 tbsp Cooking Oil high smoke point oils like vegetable or canola
  • 1 cup Bell Peppers (Red & Green) or substitute with snow peas, zucchini, or broccoli
  • 1 medium Onion yellow or sweet onions are great
  • 2 scallions Scallions for garnish, can use chives
For the Aromatics
  • 2 cloves Minced Garlic or garlic powder
  • 1 tbsp Minced Ginger or ginger powder as alternative

Method
 

Marinating and Cooking
  1. In a mixing bowl, combine chicken breasts with light soy sauce, dark soy sauce, Shaoxing wine, sugar, cornstarch, and a splash of Sha Cha sauce. Allow it to sit for about 15 minutes at room temperature.
  2. Heat 1 tablespoon of cooking oil in a wok over high heat. Add the marinated chicken in a single layer and stir-fry for 4-5 minutes until nearly cooked.
  3. Add another tablespoon of oil to the wok and toss in minced garlic, ginger, and sliced onion. Stir for about 30 seconds or until fragrant.
  4. Add the bell peppers and cook for about 2 minutes until they soften while retaining some crunch.
  5. Return the chicken to the wok and pour in the remaining Sha Cha sauce. Stir-fry for 2-3 minutes until everything is well-coated.
  6. Finally, toss in chopped scallions and stir for about 30 seconds. Serve hot over jasmine rice or noodles.
